plant based burger
calling this one the bunny burger because i do believe it should be classified as a burger but also because i feel like this is the type of food a bunny would eat (totally plant based & gf!!)
either way its delicious, especially served on a bun ( i made my own bun w almond flour, greek yogurt & sesame seeds) w lettuce, pickles and mustard. or you could throw it on top of a salad.
this recipe was inspired by Plant Theory in Miami Beach, a plant based vegan burger restaurant!
BUNNY BURGER
what you’ll need
makes three patties / 198 kcal each - 22g c, 7g p & 9g f
100g garbanzo beans
50g cooked quinoa
30g walnuts
15g oats
10g sunflower seeds
2 tbs h2o
2 tsp onion powder
salt & pepper to taste
what to do
in a food processor, combine walnuts, oats and sunflower seeds until a ‘flour’ forms
place the ‘flour’ in a bowl and add the quinoa, garbanzo beans and h2o to the food processor.
once a paste forms, add the ‘flour’ and process until the ingredients are fully mixed
add onion powder, salt and pepper
heat a little olive oil on a frying pan while you form the dough into patties
cook the patties :-)
