carrot cake
did you know that cooking carrots makes the beta carotene - the vitamin responsible for good eye health - easier to absorb in your body?
now, im not necessarily promoting carrot cake as a healthy food - but i am promoting these roasted carrots
and you are going to need to use the peelings of the carrots for something, so why not make some carrot cake?!
this is a yummy, simple, a little bit healthier carrot cake recipe that is perfect for this time of the year

what you'll need
1/2 c whole wheat flour *
1/4 c all purpose flour *
1/4 c pea protein *
* you can just use 1 cup all-purpose flour. or half all purpose and half wheat. i did this to up fiber and protein content
1/2 tsp ginger
1 tbs cinnamon
1/2 c brown sugar
1/3 c vegetable oil
1/4 c greek yogurt
1/4 c honey
2 eggs
1 tsp vanilla
1 c shredded carrots
1/2 c walnuts
oats, to sprinkle on top
what to do
preheat the oven to 350 f
combine the first 5 dry ingredients - flours and spices - in one bowl and mix well
combine the wet ingredients - 6 to 11 - in another bowl and mix well.
mix both bowls then add in the carrots and walnuts
pour into a greased pan and sprinkle oats on top
bake @ 350 for 25 minutes
