the B E S T chicken salad sandwich

growing up i was repulsed by chicken salad. i would never eat it. but i came across this recipe by food and wine and now i am in love.


what you’ll need

  • 1 pound boneless, skinless chicken breast

  • 1/2 cup mayonnaise

  • 2 teaspoons spicy brown mustard

  • 1/2 teaspoon chili powder

  • 4 ounces feta cheese, crumbled

  • 1/4 cup chopped fresh mint

  • Kosher or sea salt, to taste

  • Fresh ground black pepper, to taste

  • 8 slices of THICK multigrain bread

  • sliced tomato

  • spinach

what to do

  • cook the chicken breasts in a pot of boiling water for 20m (until chicken is cooked!)

  • combine the mayonnaise, mustard and chili powder in a bowl. then stir in the chicken, feta and mint. add salt and pepper to taste

  • scoop the mixture on some bread, add tomato, spinach and whatever other toppings your heart desires.
