coffee cake

& so the quarantine baking series continues…

i love and i miss going to coffee shops, but theres no reason you should not be able to recreate that experience at home. i made this loaf of coffee cake to recreate that experience at my own home (and in a healthier way).

COFFEE CAKE

what you’ll need

for the cake

  • 1 cup all purpose flour

  • 3/4 cup coconut flour

  • 3/4 cup brown sugar

  • 2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1 1/2 tsp baking powder

  • 1/3 cup coconut oil or butter

  • 1 tbs apple cider vinegar

  • 1.5 cup milk

  • splash brewed coffee

for the crumble

  • 1.5 tbs butter

  • 2 tbs coconut flour

  • 2 tsp cinnamon

  • 1 tsp brown sugar

  • 1 tbs oats

what to do

  • first prepare the cake by combining flours, spices, baking powder and sugar in one bowl and mix

  • combine all wet ingredients in second bowl and mix until combined

  • slowly add wet ingredients til dry and mix

  • pour the cake batter into a cake pan

  • prepare the crumble by combining all ingredients. DO NOT MELT THE BUTTER!!! you may find it easier to mix with your hands. once a crumble forms, distribute evenly across the top of the cake

  • bake @ 375 for 30-45 minutes. check on the cake halfway, if the crumble seems to be burning, cover the cake with foil until cooking is completed.
