pistachio coconut "fried" chicken

you can enjoy these chicken tenders by themselves or on top of some fluffy waffles and drowned in maple syrup. choose wisely. either way, this is a super quick and easy way to enjoy some healthier “fried” chicken.


what you’ll need

  • 1 chicken breast

  • 1 egg, beaten

  • 1/4 cup coconut flour

  • 1/8 cup crushed pistachios

  • dash of cinnamon

  • dash of salt


what to do

  • grab two bowls, in one crack your egg and beat it. in the other, combine all dry ingredients

  • dip the chicken into the egg and fully coat. then transfer to the dry mix and fully coat

  • place your chicken tenders in an air fryer at 325 and cook for 15 minutes, or until fully cooked

  • place the chicken on top of the waffle, drizzle with some maple syrup and enjoy
