hand rolled brown butter & sage pici noodles
pici noodles, while a bit time consuming, are super fun and rewarding to make.
one might say that they resemble worms, but if you’re able to get that out of your head then I promise you will enjoy them.
it involves the mixing and then hand rolling of the dough which is then left out today before boiled to perfection. the noodles are then cooked in a rich brown butter and sage sauce. there’s something so satisfactory about hand rolling your own noodles.
what you’ll need
for the noodles
1.25c semolina flour
1.75c flour
1 tsp salt
2 tbs olive oil
1c water
for the sauce
1 stick butter
1 clove of garlic, chopped
0.25c chopped fresh sage
black pepper
what to do
make the noodles - mix the flours & salt together. once well combined, add the water and oil to the middle of the flours and mix with your hands until a dough forms.
knead the dough on a floured surface until smooth, then wrap tightly in plastic wrap. allow the dough to rest for an hour
after the dough has rested, cut the dough in thin strips and roll them. place finished noodles on a floured surface and continue until all dough has been moved
begin to bring water to a boil. once it has boiled, add the noodles and cook for about three - four minutes.
make the sauce - on medium-low heat, melt the butter on the stove top. add the garlic and sage to the butter and continue to cook until fragrant.
add the noodles to the sauce and toss gently in the sauce until evenly coated. crack fresh black pepper on top to taste.
