cashew cookie dough bars

cashew cookie dough bars - a mash up between a sweet bread, cookie dough and a snack bar.

made with tapioca, pea protein and cashews, these sweet cookie dough bars are gluten free, full of good-for-you fats and packs in 6 grams of protein per slice.

what you’ll need

  • 2 eggs

  • 1/4 c monk fruit (or regular sugar)

  • 100 g cashew butter

  • 1/3 c tapioca flour

  • 2 tbs pea protein

  • 2 tsp baking powder

  • 50 g chopped dark chocolate

what to do

  • mix the egg, monk fruit and cashew butter until smooth

  • slowly add the tapioca, pea protein and baking powder to the wet mix

  • stir in the dark chocolate

  • pour mix into a baking pan and bake for 20 mins at 350

  • allow to cool before cutting into slices and store in the fridge.
