cashew cookie dough bars - a mash up between a sweet bread, cookie dough and a snack bar.
made with tapioca, pea protein and cashews, these sweet cookie dough bars are gluten free, full of good-for-you fats and packs in 6 grams of protein per slice.
what you’ll need
2 eggs
1/4 c monk fruit (or regular sugar)
100 g cashew butter
1/3 c tapioca flour
2 tbs pea protein
2 tsp baking powder
50 g chopped dark chocolate
what to do
mix the egg, monk fruit and cashew butter until smooth
slowly add the tapioca, pea protein and baking powder to the wet mix
stir in the dark chocolate
pour mix into a baking pan and bake for 20 mins at 350
allow to cool before cutting into slices and store in the fridge.
