the B E S T chicken salad sandwich
growing up i was repulsed by chicken salad. i would never eat it. but i came across this recipe by food and wine and now i am in love.
what you’ll need
1 pound boneless, skinless chicken breast
1/2 cup mayonnaise
2 teaspoons spicy brown mustard
1/2 teaspoon chili powder
4 ounces feta cheese, crumbled
1/4 cup chopped fresh mint
Kosher or sea salt, to taste
Fresh ground black pepper, to taste
8 slices of THICK multigrain bread
sliced tomato
spinach
what to do
cook the chicken breasts in a pot of boiling water for 20m (until chicken is cooked!)
combine the mayonnaise, mustard and chili powder in a bowl. then stir in the chicken, feta and mint. add salt and pepper to taste
scoop the mixture on some bread, add tomato, spinach and whatever other toppings your heart desires.
