fudgy coconut cashew cookies
i was heavily skeptical about using black beans in my sweets, but trust me. these cookies are insane.
they’re chewy, salty, chocolaty and crumbly. basically everything you could ever want in a cookie AND they contain healthy carbohydrates, fats and even a little protein.
FUDGY COCONUT CASHEW COOKIES.
makes 6 cookies
what you’ll need -
15 oz black beans, rinsed & drained
2 tbs coconut oil
2 tbs sf maple syrup
2 tbs chocolate hazelnut milk (see how to make nut milk here)
3 tbs pea protein
1/4 tsp baking powder
6 tbs cocoa powder
2 tbs brown sugar
1 tsp sea salt
35 g coconut cashews (recipe coming soon!!)
what to do
preheat oven to 350
combine all ingredients except for the cashews & sea salt in a food processor and blend until dough liike consistency forms
then, stir in the chopped cashews and sea salt
place dough on a greased pan and bake for 18 minutes
allow to cool completely before enjoying
