pistachio coconut "fried" chicken
you can enjoy these chicken tenders by themselves or on top of some fluffy waffles and drowned in maple syrup. choose wisely. either way, this is a super quick and easy way to enjoy some healthier “fried” chicken.
what you’ll need
1 chicken breast
1 egg, beaten
1/4 cup coconut flour
1/8 cup crushed pistachios
dash of cinnamon
dash of salt
what to do
grab two bowls, in one crack your egg and beat it. in the other, combine all dry ingredients
dip the chicken into the egg and fully coat. then transfer to the dry mix and fully coat
place your chicken tenders in an air fryer at 325 and cook for 15 minutes, or until fully cooked
place the chicken on top of the waffle, drizzle with some maple syrup and enjoy
