lemon blueberry scones

you don’t know how badly you need these scones until you’ve made them

LEMON BLUEBERRY SCONES

what you’ll need

makes 8 scones

  • 1c flour (i used a mixture of almond, coconut & gf all purpose)

  • 1/2c protein (or 4 scoops of collagen)

  • 3tbs coconut sugar

  • 2tsp baking powder

  • 1/3c greek yogurt

  • 3tbs butter

  • 1 egg

  • 1/2tsp vanilla

  • juice from 1/2 lemon

  • sea salt

  • 1c blueberries

  • lemon zest

for the glaze

  • 1/4 cup coconut sugar

  • 1-2 tbs milk

  • 1/2 tsp vanilla

what to do

  • combine the dry ingredients in a bowl and then cut in the butter (do this with a fork!!)

  • next, combine the yogurt, egg, vanilla and lemon juice. slowly add this mixture to the dry.

  • once the wet and dry have been combined, stir in the blueberries and a teaspoon of lemon zest

  • on a floured surface, knead your dough. it should be crumbly!!!. with scones, you can just kinda turn the dough over and keep making it into a ball shape until the dough comes together nicely.

  • next, you want to make a disk shape and cut it into 8

  • top with additional lemon zest and a sprinkle of sea salt

  • bake at 350 for 25 min

  • make the glaze by combining the ingredients & mixing

  • top w coconut sugar glaze!!
