thai shrimp red curry
By using a premade red curry paste, this dish is a super healthy, tasty and quick option for busy nights when you’re craving something tasty.
what you’ll need
1 can coconut milk
1 tbs Thai red curry paste
1 teaspoon bullion seasoning
1 cup broccoli florets
1 cup mushrooms
1/2 sliced red bell pepper
2 cloves garlic
1/4 large yellow onion
1 tsp vegetable oil
1lb shrimp, peeled and deveined
lemongrass , 4
to serve
cooked rice
spinach
fresh shaved ginger
what to do
chop your broccoli, mushrooms and bell pepper and place in a bowl
over medium heat, heat your vegetable oil and garlic until fragrant
add onions and cook until browned
next, add in your red curry paste, bullion, and coconut milk and stir until combined
once combined, add the lemongrass and veggies and cook til veggies are soft.
toss in shrimp, once pink remove from heat.
in a bowl, add some spinach, rice and top with the shrimp mixture.
