thai shrimp red curry

By using a premade red curry paste, this dish is a super healthy, tasty and quick option for busy nights when you’re craving something tasty.

what you’ll need

  • 1 can coconut milk

  • 1 tbs Thai red curry paste

  • 1 teaspoon bullion seasoning

  • 1 cup broccoli florets

  • 1 cup mushrooms

  • 1/2 sliced red bell pepper

  • 2 cloves garlic

  • 1/4 large yellow onion

  • 1 tsp vegetable oil

  • 1lb shrimp, peeled and deveined

  • lemongrass , 4

to serve

  • cooked rice

  • spinach

  • fresh shaved ginger

what to do

  • chop your broccoli, mushrooms and bell pepper and place in a bowl

  • over medium heat, heat your vegetable oil and garlic until fragrant

  • add onions and cook until browned

  • next, add in your red curry paste, bullion, and coconut milk and stir until combined

  • once combined, add the lemongrass and veggies and cook til veggies are soft.

  • toss in shrimp, once pink remove from heat.

  • in a bowl, add some spinach, rice and top with the shrimp mixture.

  • enjoy!
