strawberry jelly donut muffins

What better way to start off Valentine’s Day ( or any day really ) than with this protein packed, delicious strawberry jelly donut muffin!!!



what you’ll need

  • 1.5 c flour ( i used 1/2c rye, 1/2c coconut and 1/2c all purpose)

  • 1/2c whey

  • 1/2c powdered erythritol

  • 1/2 - 1c almond milk

  • 1 egg

  • 1/2c Greek yogurt

  • 1 tbs baking powder

  • 1 tsp xanthum gum

  • 1/2 tsp salt

  • 1 tsp vanilla

  • 1 c strawberries, chopped

  • 1/4c walnuts, crushed

  • 60g strawberry jelly

what to do

  • Preheat oven to 350

  • Mix dry ingredients in a bowl

  • Mix wet ingredients in a bowl

  • Fold the dry mixture into the wet and mix til well combined

  • Fold in the walnuts and strawberries

  • In a greased muffin pan, spoon in the mixture about halfway - add a bit of jelly and cover the top with more mixture

  • Bake for 15-17 min until golden on top

  • While baking, add powdered erythritol and water to a bowl and stir to make glaze

  • Once muffins are cooked, remove from oven and top with glaze. Allow to cool
