Lemon Poppy Seed Protein Muffin
What you’ll need
105g Whey, vanilla
90g Milk
3 Eggs
120g Almond Flour
60g whole wheat flour
3/4 teaspoon Xanthan gum
6 tablespoons Erythritol
1 1/2 teaspoons Baking powder
1 1/2 teaspoons Vanilla extract
Pinch of salt
1 1/2 teaspoons Lemon extract
3 teaspoons Lemon juice & zest
3 tablespoons Poppy seeds
What to do
Preheat oven to 350°F (175°C) and prepare a muffin tin by either greasing it or using cupcake liners.
Mix the wet ingredients: In a large bowl, whisk together the egg and milk. Add in the vanilla extract, if using.
Add dry ingredients
Pour into muffin tin: Spoon the batter into one muffin cup.
Bake for about 18-22 minutes, or until a toothpick inserted comes out clean.
Cool for a few minutes before enjoying.
