Lemon Poppy Seed Protein Muffin

What you’ll need

  • 105g Whey, vanilla

  • 90g Milk

  • 3 Eggs

  • 120g Almond Flour

  • 60g whole wheat flour

  • 3/4 teaspoon Xanthan gum

  • 6 tablespoons Erythritol

  • 1 1/2 teaspoons Baking powder

  • 1 1/2 teaspoons Vanilla extract

  • Pinch of salt

  • 1 1/2 teaspoons Lemon extract

  • 3 teaspoons Lemon juice & zest

  • 3 tablespoons Poppy seeds

What to do

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin by either greasing it or using cupcake liners.

  2. Mix the wet ingredients: In a large bowl, whisk together the egg and milk. Add in the vanilla extract, if using.

  3. Add dry ingredients

  4. Pour into muffin tin: Spoon the batter into one muffin cup.

  5. Bake for about 18-22 minutes, or until a toothpick inserted comes out clean.

  6. Cool for a few minutes before enjoying.
