crispy, fluffy protein waffles

i have been experimenting with protein waffles for some time now. i always have used whey proteins and the waffles always come out a little dry, which is just one of the downsides of working with whey. i experimented with pea protein and a couple new techniques and they came out perfect.

these waffles are perfect to whip up on a lazy sunday morning, or prepped as breakfast through out the week. this recipe has the perfect vanilla taste , but can also be used as a base for fun flavor add ins, such as chocolate, peanut butter and more.


CRISPY, FLUFFY PROTEIN WAFFLES



what you’ll need

makes 11 pieces

  • 2 eggs, separated into yolks and whites

  • 1 tbs brown sugar

  • 1 cup oat flour

  • 1/4 cup sf maple syrup

  • 3/4 cup almond milk

  • 30 grams pea protein

  • 4 tsp baking powder

what to do

  • separate the egg yolks from the egg whites

  • whip the egg withes with the brown sugar until foamy

  • add remaining ingredients to the egg yolks and mix

  • slowly mix the egg white mixture into the egg yolk mixture

  • add batter to waffle iron & cook

  • serve with fresh fruit, nut butter, syrup or what ever else you like

  • if making a lot to prep for the week, they re-heat really well in an air frier!!!

- 16 grams protein

- 24 grams carbohydrates

- 6 grams fat
