coffee cake
& so the quarantine baking series continues…
i love and i miss going to coffee shops, but theres no reason you should not be able to recreate that experience at home. i made this loaf of coffee cake to recreate that experience at my own home (and in a healthier way).

COFFEE CAKE
what you’ll need
for the cake
1 cup all purpose flour
3/4 cup coconut flour
3/4 cup brown sugar
2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 tsp baking powder
1/3 cup coconut oil or butter
1 tbs apple cider vinegar
1.5 cup milk
splash brewed coffee
for the crumble
1.5 tbs butter
2 tbs coconut flour
2 tsp cinnamon
1 tsp brown sugar
1 tbs oats
what to do
first prepare the cake by combining flours, spices, baking powder and sugar in one bowl and mix
combine all wet ingredients in second bowl and mix until combined
slowly add wet ingredients til dry and mix
pour the cake batter into a cake pan
prepare the crumble by combining all ingredients. DO NOT MELT THE BUTTER!!! you may find it easier to mix with your hands. once a crumble forms, distribute evenly across the top of the cake
bake @ 375 for 30-45 minutes. check on the cake halfway, if the crumble seems to be burning, cover the cake with foil until cooking is completed.
