lemon lavender ice cream

im having a serious love affair with cashews and the lemon lavender flavor combo. this stuff is seriously amazing, so easy to make and doesn’t even require an Ice cream maker!! just blend all the ingredients together, pop in a container and freeze. the perfect sweet treat :-)

I adapted this recipe from minimalist baker to create this ice cream

LEMON LAVENDER ICE CREAM

what you’ll need

  • 1.5 cups soaked & drained cashews 

  • 1c almond milk

  • 1/8c maple syrup

  • 1/8c honey

  • 1/4 cup sugar

  • juice from one lemon

  • 1 tsp lavender

  • 1 tsp lemon zest

  • 1 tsp vanilla extract

what to do

  • combine all ingredients in a blender & blend until liquified. pour into a freezer friendly, sealed container. top with more lavender and lemon zest. freeze for 4 hours or until firm.
