dark chocolate pistachio oat bars

sometimes, all you need is a little something sweet.

& lately, sometimes is a lot of the time.

yesterday, my mom and i took a long walk all around town and we ended up talking about baklava - a greek dessert consisting of nuts, honey, phyllo dough and sometimes chocolate. we did not have any phyllo dough on hand so i used what we had and made a baklava inspired pastry bar with an oat base. i used my moms honey in this recipe - as eating local honey is super beneficial in helping with seasonal allergies.

DARK CHOCOLATE PISTACHIO OAT BARS

what you’ll need

makes 16 squares / each - 154kcal, 20g c, 4g p, 6g f

for the base

  • 0.5c almond flour

  • 1c oat flour

  • 0.25c honey

  • 1 scoop collagen powder

  • 1 tbs almond butter

  • 0.5tbs cocoa

  • 0.5tsp vanilla

for the pistachio layer

  • 1c pistachios, chopped

  • 0.5c oats

  • 0.25c honey

  • 0.25c dark chocolate

what to do

  • first, make the base by combining all ingredients and mixing well. then press into a square pan

  • next, make the pistachio layer by mixing all ingredients. it should be thick and chunky. once all ingredients are mixed, add it the the square pan on top of the base layer.

  • place the bars in the freezer to harden.

  • cut into 16 squares and enjoy whenever
