stuffed pizza calzone

i love italian food - pizza, pasta, cheese, bread. you name it, i’ll eat it.

calzones are like the ULTIMATE food when you need a little of everything, i mean its pizza, its a sandwich, its doughy and cheesy and perfect.

this recipe makes one personal calzone. it it a delicious satisfying lunch. perfect with a side salad and some sparkling h2o & lemon to make you feel fancy at your at home quarantine restaurant.

STUFFED PIZZA CALZONE

what you’ll need

serves one

  • 1/4c gf all purpose flour

  • 80g greek yogurt

  • 1tsp baking powder

  • spices to taste - oregano, sea salt, chili flakes, thyme

  • 1.5oz chicken breast

  • 1 mozzarella ball

  • sundried tomatoes

  • olive oil & chili flakes for drizzling

what to do

  • make the dough by combining the flour, yogurt, baking powder & spices in a bowl. mix mix mix.

  • next, put a little dough on a pan with parchment paper. create an indent in the middle for your fillings and a ‘crust’ on the outside

  • fill the dough & use the remainder of the dough to seal it off. (wetting your hands may help with this part!!!)

  • bake at 350 for 15-20min. once it has completed baking, drizzle a little olive oil & chili flakes on top.
