i love pizza. and i love it even more when i know what it is made out of and that those ingredients are working in my body to do good things. like this pizza uses a gluten free crust and protein packed toppings.

i have been doing some research lately on medical nutrition therapy for type one diabetes, which lead me to reading about the connection of celiac disease and type one diabetes. apparently, there is up to a 19% prevalence rate of celiac in those with type one and most of the times people are asymptomatic. if one is asymptomatic and continues to consume gluten, this can lead to a malabsorption of nutrients and in turn cause unexplained hypo & hyperglycemia. after reading a couple more research papers, i have decided to adopt a gf diet for the month of april to see if it leads to more stable blood glucose control (which - thus far it has…... don’t know whether this is a good or bad thing)

GLUTEN FREE MINI PROTEN PIZZA

what you’ll need

makes one pizza /

for the dough

  • 1/4 c almond flour

  • 1/8 c h2o

  • 1/2 tbs olive oil

  • 1 tsp baking powder

  • 1/4 tsp salt

the toppings

  • 80 g chicken breast, cooked

  • black olives, sliced

  • arugula

  • 1 tbs marinara sauce

  • low fat swiss cheese

  • italian seasoning

  • chili flakes

what to do

  • first, make the dough! combine all dough ingredients in a bowl and mix

  • place the dough on a pan and shape into a circle. if you have trouble shaping, add a little olive oil to the top

  • place in the oven @ 400 for 3 minutes

  • remove the dough from oven & add toppings!!

  • place back in the oven for an additional 5 minutes, or until cheese has melted
