LEMON RICOTTA PANCAKES

what you’ll need

  • 1/2c flour of choice

  • 1 tbs coconut flour

  • 1 egg

  • 1/4c fat free ricotta

  • 1 tbs milk

  • juice & zest from 1/2 lemon

  • 1 tsp vanilla

  • 1/2 tsp baking powder

what to do

  • beat the egg, vanilla and ricotta until smooth, then add in the flour and baking powder and mix until smooth. slowly mix in the lemon juice and zest, then cook on skillet with coconut oil until done!!
