pineapple cherry glazed chicken breast

juicy pineapple. tart cherry. tangy bbq. juicy chicken. what more could you ask for?

the idea for this chicken came to me one evening while walking home and i couldn’t wait one second after walking through the door to create it. you can serve it with a side of sweet potato, lightly coated in coconut oil and air fried at 400 degrees for 15 minutes & some kale gnocchi (which i get from trader joe’s)


pineapple cherry glazed chicken breast

makes 2 servings

what you’ll need

  • 30 grams cherry

  • 80 grams pineapple

  • 60 grams sf bbq sauce

  • 6 ounces chicken breast, sliced

  • salt & pepper, to taste

what to do

  • mix pineapple & cherry and simmer on low heat until well mixed

  • then, slowly add the bbq sauce to the fruit until a glaze forms

  • remove from heat, and coat each sliced chicken breast in the glaze and place on grill pan

  • grill chicken breast until fully cooked, adding more glaze as the chicken continues to cook

  • remove from heat & enjoy :-)
